Burnt cauliflower with Thai spices (vegetarian)

One of our latest trio of vegetarian starters, out burnt cauliflower with Thai spices and siracha mayonnaise is proving to be a big hit!

Thai Spices

Ingredients:

Star anise

Cinnamon

Cloves

Cardamon

coriander seeds

Cumin seeds 

Amount:

3 pieces

1 piece

8 pieces

4 pieces

1/2 tablespoon

1/2 tablespoon

Instructions:

1. Add all the ingredients together (except the cumin seeds) to a frying pan over medium to low heat

2. Cook for 3-4 minutes and tossing the herbs every minute

3. Add the cumin seeds when it is the last 2 minutes of cooking

Burnt Cauliflower

Ingredients:

Cauliflower

Butter

Basil

Mayonaise

Sriracha Sauce

Apple cidar Vinegar

Thai spice 

Amount:

100g

20g

3 leaves

1 tablespoon

1/3 tablespoon

1/4 tablespoon

1/3 tablespoon

Instructions:

1. Preheat oven till 180 degrees and cut the cauliflower into big bite size pieces

2. Add butter into a small pot and add Thai herbs (butter should be liquid but not bubbling hot)

3. Add the cauliflower into the spiced butter and put into a baking tray and cook for 3 minutes

4. Take the cauliflower out and flip them, then add in the basil leaves, make sure that you stick them on the buttery part of your tray so they get crispy

5. Put the tray back into the oven and cook for another 3 minutes

6. Plate up and served with the bowl of spicy tangy mayonnaise
