Sponge cake

Self rising flour

Baking soda

Eggs

Condensed milk

Evaporated milk

Whipping cream

Thai tea powder

Method:

1. In a bowl, whisk the eggs and the sugar until white and fluffy.  Sieve the flour add the baking soda and fold into the mix.

2. Take a baking tin, butter the sides and sprinkle with flour, pour in the mix and cook in a preheated 180°C oven for 20-25 minutes.

3. Mix the "milks" and Thai tea in a pot and heat up without letting it boil. Let it infuse. Once its cooled down lightly, strain through a cheesecloth or a coffee filter. Cover the cake with this liquid and let it absorb.

4. once absorbed, cut into portions and gently all sides in a dry pan until caramalised, being careful not to burn.
